GLUTEN FREE CHOCOLATE CHIP COOKIE RECIPES

Below is one of our absolutely favorite gluten free chocolate chip
cookie recipes, sent to us by a longtime gluten free baker from the
Pacific Northwest. And believe us, every time we've made these cookies,
they haven't lasted long. So follow along and alert the family well
ahead of time, because these gluten free chocolate chip cookies are
simple fantastic.
Ingredients:
1/4 cup white sugar
1/2 cup brown sugar
1/2 cup shortening, butter or margarine (gluten free)
1 teaspoon of gluten free vanilla
1 egg
3/4 cup white or brown rice flour
1/4 cup soy flour
1/2 teaspoon baking soda
1/2 teaspoon salt
6 oz. package of vegan chocolate chips
Combine the shortening in a large bowl with the sugars, salt and
vanilla. Mix well. Add the egg and mix well. Preheat oven to 350F. Mix
in the dry ingredients, and stir in the chocolate chips. Next, drop the
mixture by SMALL teaspoons onto a lightly greased cookie sheet and bake
8 - 10 minutes (watching carefully). Cool on pan briefly and carefully
remove to a cooling rack. Careful, the cookies will be delicate at this
stage. Once they cool, however, they will taste every bit as good as
traditional chewy cookies. Oh, and don't try making these gluten free
chocolate chip cookies too big. We've tried, and it always ends in a
