VEGAN CAKE RECIPES
We're amazed at the number of people in
the world who still believe it's impossible to make a moist, delicious
cake without an egg! But fear not, good vegans, there are ample options
for vegan cake recipes. And, done right, even non-vegetarians will love
the result. Below is a simple recipe we've found, followed by a few
suggested variations. Let the variations serve as catalyst to much more
experimentation on your part. The portions in the basic vegan cake
recipe are small, so feel free to double (or even triple!) the listed
amounts if your house is big, or just big on vegan cake.
Basic Vegan Cake Recipe:
- 1.5 cups flour
- .5 cups oil (or mix half oil, half water…but the more oil, the richer
the cake)
- 1 cup sugar (or less…depending on your sweet tooth)
- 1.5 tsp. baking soda
- .25 tsp. salt
- 1 cup soy milk
Use electric mixer or whisk with fork in bowl until fully mixed, then
bake at 375 for 25-30 minutes in a lightly greased pan.
Suggested Variations:
Orange Cake: Follow the above recipe, but substitute 2 cups of orange
juice for soy milk.
Lemon Cake: Same as above, but add .25 or .5 cup of lemon juice and cut
back the soy milk slightly.
Chocolate Chip Cake: sprinkle .25 or .5 cup of vegan chocolate chips on
top of cake before baking.
Spice cake: Add 1 tsp cinnamon, 1 tsp allspice, 1/2 tsp ground cloves,
and 1/4 tsp nutmeg.
Banana cake: reduce sugar to .5 cups and substitute 1 cup mashed banana
for soy milk (keep a little soy milk if the batter is too thick).
